Tuna and mango cubes with sweet Aleppo pepper

Pumpkin cream and puffed corn croutons

Smoked trout from Gottéron on lentil tartare with cooked wine and parmesan crumble

Multicolored salad, crispy vegetables, roasted walnuts, homemade vinaigrette

MAIN COURSES

Sautéed hare medallion with peppered cocoa, autumn garnish

Roasted John Dory fillet on orzotto with crayfish butter

Pork saltimbocca with Gruyère cured ham, Marsala sauce

Omelette stuffed with porcini mushrooms on herb emulsion and paprika-roasted potatoes

All dishes are served with fresh market vegetables and a starch of the day.
